Yeah, most people love love fresh blueberry pie, but I am officially insane for it. I’ve had many different recipes over the years, but my friend Janey’s in the best I’ve EVER had. It’s so easy to make! I don’t know what it is about this one, but the absolute melt in your mouth sweetness is amazing with a fresh cup of coffee. And if you really want to get crazy, a scoop of vanilla bean ice cream on top will really send you over the edge. All right, all right, here’s the recipe below.

6 Cups of Farm Fresh Blueberries
¾ of a Cup of Granulated Sugar
1 ½ Tablespoons of Unsalted Butter
1 Tablespoon of Fresh Lemon Juice
3 Tablespoons of Cornstarch
½ Teaspoon Ground Cinnamon
1 Teaspoon of Salt
1 Sheet of Refrigerated Pie Crust
¼ Cup of Cold Water
Have your oven preheated to 140 degrees. Then trim and then flute the edges. Place in fridge for half an hour. Line the crust with thicker foil. Place in oven and bake for 25 minutes. Bake for around 5 minutes until bottom is golden brown. Then place on rack to cool.
Place a small pan on medium heat on the stove. Add cornstarch, cinnamon, sugar, salt and water and stir until it smooths out. Place 4 cups of blueberries into the pan. Bring the ingredients to a boil, then stir for a couple of minutes until it gets thick and it bubbles.
Take the the pan off the heat then add in the butter, the last 2 cups of berries, and the lemon juice and stir until the butter is completely melted. Wait a few minutes for it to cool down then pour all ingredients into the crust. Place into fridge for about 2 hours and then serve!
