Can't Leave the House? This French Onion Soup Recipe Will Make You Love Staying Home!
This has to be one of the greatest soups of all time! All those sweet onions, tasty bread, and gooey melted cheese will make you feel right at home. But what most people don't realize is how important the broth that you use is.
Beef broth is what's traditionally used, but all beef broths don't taste alike. Some are delicious and perfect for the recipe and some are not. Now you can make a homemade broth but it's a lot of work and takes a lot of time. So, we're recommending for this recipe that you buy a flavorful broth that you know will work well for your soup.
- 3 lbs of yellow onions sliced thin to make 10 cups
- 2 tablespoons of butter
- 4 tablespoons of olive oil
- 1 teaspoon of white sugar
- 1 teaspoon of salt
- 2 minced garlic cloves
- 8 cups of beef stock
- ½ cup of white dry wine
- ½ teaspoon of ground black pepper
- 8 slices of French Bread cut 1 ½ inches thick
- 2 cups of shredded mozzarella
- half a cup of grated parmesan cheese
Steps to Make
First you caramelize the white onion. Place in a thick bottomed pot. Add 3 tablespoons of olive on medium heat then add the onion and stir so they are coated.
Cook and stir the onions for 20 minutes. Turn the heat up just a little while adding the 4th spoon of oil along with the butter. Stir for another 15 minutes as the onions begin to brown. Sprinkle with sugar then add salt. Then stir and cook for another 15 minutes.
Add in your white wine and stir. Then add the beef stock and bring to a simmer. Put the heat to low with the pot covered and cook for another half an hour. Season with more salt and pepper if needed.
Time to toast the bread. Heat oven at 450 and use a rack lined with foil. Brush both sides of the bread lightly with olive oil. Place into oven and toast for 5 minutes. Then turn slices over and cover with mozzarella and parmesan cheese and place back in until melted.
Lastly, ladle soup into bowls and place the French slices on the top of each bowl and then enjoy the heck out of this fantastic dish!
