Recipe: Dry Rub BBQ Ribs - Mouthwatering & Low Carb

BBQ season is the most wonderful time of the year. And with this super-easy recipe, you'll get some massive flavor while keeping the carbs to a minimum.

1 or 2 racks of ribs - it doesn't matter if they are a larger country-style rack or a smaller baby back cut. Hardware: 1 baking pan, aluminum foil, your oven and your bbq grill

Dry Rub Ingredients:

  • 1 teaspoon cayenne pepper
  • 2 tablespoons ground black pepper
  • ¼ cup paprika
  • 1 tablespoon granulated onion
  • 1 tablespoon dark brown sugar
  • 2 teaspoons garlic powder
  • ½ teaspoon of cinnamon
  • 1 tablespoon chile powder
  • 2 teaspoons dry mustard
  • 2 teaspoons celery salt
  • 1 teaspoon coarse sea salt

A Few Easy Steps to Prepare

  1. Mix the dry rub ingredients in a bowl. Place the racks on a large baking sheet. Liberally coat both sides of the ribs and rub it in good.
  2. Pour 1 1/2 cups of water into the tray. Cover the pan with aluminum foil. Place the pan in an oven set at 250 degrees for 3 hours (for really large racks you can go and addition half hour or so). The purpose of the water is that it actually steams the meat at that low temperature, making it incredibly juicy, tender and moist.
  3. Next, take the ribs out of the oven and fire up your outdoor grill. Place the racks on your grill at a medium heat for 20 minutes to half an hour or so (depending on the size of the racks) in order to cook them through, making them crispy on the outside and juicy on the inside. (Be careful not to over-cook).
  4. And the final step: DEVOUR those tender, mouthwatering bad boys, accompanied by some grilled veggies and your drink of choice to wash it all down. Low carb can be so incredibly delicious!

Why We Ache Days AFTER Physical Activity - and the Best Ways to STOP It!

Important caveat: I replaced these foods with smarter choices, including more veggies – walked more - and dropped 50 lbs in 12 months. YOU might be different. As always, check with your doctor before starting any weight loss effort, and discuss what's right for you. But THIS worked for me. I ate good, tasty foods and NEVER starved myself.

Grains

Bread – Tragic, but true. The more you eat, the more you crave. It's the carbs, and carbs that aren't burned turn to sugar. Starchy ingredients, gluten and wheat are hard to pass through the digestive system and cause you to feel bloated. I know this sounds brutal, but you can add it back in later on.

Soda: Regular & Diet – A 12 oz can of cola has 39 grams of sugar which equals 10 teaspoons, and anything “artificial” doesn't belong in your body. If I could switch to seltzer, you can too.

Pasta – I'm half Italian and giving up pasta and bread was like torture. Not that pasta is terrible for you, but if you eat a lot of it - there's 42 grams of carbs per serving before you load it up with sauce, cheese, etc. Again, I added it back in later on.

Salted Processed Snacks – Pretty much a no brainer.

Now, I ate a lot of these 4 and dropping them cold turkey wasn't easy. But they say it takes 21 days to create a new habit. Well, after 3 weeks this actually became easy, the pounds began to come off, and I now eat bread and pasta in moderation. While this worked for me, check with an expert to find out what's best for you.

You slither into the car on a Monday morning while forcing your body and your brain to gear up for the workday we all dread. Protein Packed Chili Recipe

When you talk about comfort foods, a mouthwatering, tangy bowl of chili has to be right up near the top of the list. And, if you look at the ingredients, there are some nice health benefits, too - it's low in saturated fat while it packs a ton of protein and iron. When you add beans, that adds a nice amount of dietary fiber and potassium. A big bowl of chili (2 cups) can have up to 32 grams of protein and 16.8 grams of fiber.

So, here's the recipe that I've been making for years that the family goes nuts over...

Bowl of chili

Ingredients: 2 lbs of grass-fed beef, 85-15 ratio • 2 tbls olive oil • 1 large diced onion • 4 minced garlic cloves • 2 cans of diced tomato 15 oz • 1 can of tomato sauce 15 oz • 2 tbls of chili powder • 2 tspns of cocoa powder • 2 cans of red kidney beans 15 oz

Instructions: You'll need a large pot and pan. Pour the olive oil in the pot over a low flame. Add in the minced garlic, and diced onion cooking it down for about 2 minutes. In your large frying pan, add your beef and cook until it's about 80% done. Drain the grease and add the meat into the pot. Then add tomato sauce and diced tomatoes stirring it all in. Next add chili and cocoa powder, stirring it again. Cook on low heat for 15 minutes and then stir in kidney beans. Put your flame on simmer for another hour and 15 minutes, leaving the lid on the pot about a quarter inch open. When you hear it bubble, give it a good stir.

Suggested toppings: Shredded cheddar or Monterrey Jack, sour cream, hot sauce, diced scallions, crispy fried canned onions, squeeze in fresh lime juice, and tortilla chips for dipping if you like! I'm ready to eat my computer screen, so, it's off to the kitchen I go for some amazing homemade chili!

Think Age Can Stop You? Ha – Time to Think Again!

I was a heck of a hockey player when I was 20. My team was the US National champions - yeah, I was THAT good. Jump ahead two decades and I'm playing in a men's league against guys half my age. I did pretty well and enjoyed it for few years. But as the seasons went by, the players got a little younger and faster, and I got a little older and slower. It was really hard to deal with and upset me terribly – that is, until I had a much-needed shift in my mindset and approach. I refused to give up playing, so, I joined an over 40 league and guess what... I was awesome - actually, one of the best players out there! Damn, it was so much fun again!

I sit all day behind a desk-top and write stuff for a living. I put in some long days, planting my rump in a chair for up to 12 hours. Yeah, I know, being sedentary isn't healthy, but I'm good at what I do and I'm not about to fulfill my lifelong dream of playing in the NHL.

Now, walking is good for the body and it's easy, so I bought a pedometer and I see I'm doing 3,000 steps, (which is roughly a mile and a half) which I thought sounded pretty good... Until I searched the web, finding numerous articles claiming that the magical number is 10,000 steps a day - which garnered the response, “What chu tawkin' bout Willis?!” That's close to 5 miles, how am I supposed to perform THAT little miracle?” That would intimidate a whole lot of people who would stop before even starting.

So, upon doing a bit more research, the real goal should be this: If you're not doing anything at all, then start small. If you're doing a little, push to do a little more. So, I challenged myself to see how many steps I can increase daily. I'm doing the things you've always heard like parking farther away, taking the stairs instead of an elevator, and while I don't have a dog, I started walking with my neighbor while he walks his dog, although the tinkle and poop breaks get a little tiresome – the dog, not me.

Heat vs Ice for Pain? – Let's Settle This Mystery

The world is full of great mysteries perplexing us for eons... the lost city of Atlantis, the great pyramids, the infield fly rule... and will someone finally please tell me “Who's on first”? But one of the biggest mysteries of all is whether to use heat or ice for pain. It's an important topic because so many people get it wrong, which does a lot more harm than good. So, we're here to break it down simply...

Pain relief with heat/ice

HEAT is for non-inflammatory pain – NEVER for fresh injuries or inflammation. (Think of it this way - what do you think happens when you put something hot on top of something inflamed? Ouch.) Heat is for relieving stiffness, soreness, aching, muscle knots, spasms, and tightness - it increases circulation and blood-flow to the muscles. This is why a hot shower or bath can do wonders. It's also good to warm muscles before stretching and activity. (Note: Well-made compression garments keep muscles and joints warm, helping to prevent pain during and after physical activity.)

ICE is for reducing inflammation, swelling and pain from fresh injuries – NEVER for general muscle soreness, achiness, or tightness. Icing (cryotherapy for the science nerds) is used for new injuries, ligament sprains, tendonitis, strained, pulled, or torn muscles. It reduces blood flow to the area, reducing inflammation and relieving pain. You can ice for several days with swelling (generally for 10 minutes at a clip, once an hour). But once the swelling subsides, it's recommended to then apply moist heat that gets into the muscles to loosen them once again.

Ask Copper Fit: Is ”No Pain, No Gain” Actually Damaging Me?

It was the exercise mantra of the early 1980's for testosterone-laden muscle-bound monsters and aerobic workout maniacs. “No Pain, No Gain” or “Feel the Burn” could be heard throughout gyms everywhere, (like it was some kind of badge of honor) accompanied by primordial grunts, blood-curdling screams, along with some seriously salty language. But it's the year 2019 and we know better. We know that living with pain is downright awful and to suggest that you won't have any gain without it is beyond absurd.

No pain

Pain is a warning signal, it's your body's way of telling you that something is wrong, and you need to either slow down or shut it down all together. The old-school macho bs that told you to push through the pain, to push yourself beyond your physical limits was, well, pretty-damned stupid. Now, discomfort or achiness is one thing, lactic acid is forming in the muscles and you're tired and sore. But if you start to feel acute pain and you keep going, there might be some serious or even permanent damage taking place.

In an August 2014, Women's Health Magazine article entitled, “Why No Pain, No Gain is a Bad Idea”, Michael Boyle, owner of Mike Boyle Strength and Conditioning in Woburn, Massachusetts says, “Discomfort as a result of exercise should be limited to your working muscles alone. You need to gauge when and where pain occurs during an exercise. The reality is, you shouldn't have any discomfort except for muscle fatigue.”

Knee pain
