Recipe for Two - Ingredients
- Seedless Watermelon: 12 – 1 inch cubes
- 2 cups of sliced and quartered cucumber
- 2 cups of crumbled feta cheese
(Buy a block of feta and crumble it yourself for fresher taste)
Dressing – Ingredients
- 4 tablespoons of extra virgin olive oil
- 4 tablespoons of red wine vinegar
- 2 teaspoons of honey
- ¼ teaspoon of pepper
- ½ teaspoon of salt
Steps to Make
In one bowl mix oil, vinegar, honey, salt & pepper
In another bowl put in watermelon, cucumber, and 1 cup of the feta
Pour your dressing over ingredients & mix very gently
Then sprinkle the 2nd cup of feta over the top
Chill for an hour before serving as it lets the dressing and juices from the watermelon absorb
